Chocolate Eclair Cake




2 (3.5 ounce) packages instant vanilla pudding mix
1 (8 ounce) Cool Whip
3 cups milk
1 (16 ounce) package graham cracker squares
1 (16 ounce) package prepared chocolate frosting



In a medium bowl, thoroughly blend the pudding mix, whipped topping, and milk.
Arrange a single layer of graham cracker squares in the bottom of a 13x9 inch baking pan. Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.
Spread the frosting over the whole cake up to the edges of the pan. Cover, and chill at least 4 hours before serving.

Broccoli Salad


8 slices bacon (I usually use a pound, we love bacon!)
2 heads fresh broccoli, chopped
1 1/2 cups Cheddar cheese, shredded
1/2 large red onion, chopped
1/4 cup red wine vinegar
1/8 cup white sugar
2 teaspoons pepper
1 teaspoon salt
2/3 cup mayonnaise
1 teaspoon fresh lemon juice


Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
In a large bowl, combine broccoli, cheese, bacon and onion.
Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve.

Crock Pot BBQ Meatballs

1 1/2 pounds ground beef
1/4 cup chopped onion
1/4 cup green pepper
1/4 cup rolled oats
1 egg, beaten


Combine first five ingredients for meatballs. Mix well. Shape balls and brown in skillet. Drain off fat; place in slow cooker.

1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons prepared mustard


Mix sauce ingredients and pour over meatballs. Cook for 4 to 6 hours on low.

Serve with noodles, rice, or mashed potatoes.

Broccoli Cheese Chicken (Crock Pot)

4-6 chicken breast
2 cans of condensed Broccoli cheese soup
1/2 cup of milk
dash of pepper and salt

Add all ingredients to crock pot and cook 4-6 hours

Yumm!

Crock Pot Beef Stroganoff

1 package stew beef
1 can cream of mushroom soup
1 onion, chopped
1 beef boullion cube
1 cup water
1 8 ounce container sour cream
salt, pepper and paprika


Throw everything in the Crock Pot, except the sour cream, and the last 3 ingredients (spices) Cook for several hours (Around 6)

Before serving add sour cream and spices to taste.

Serve with Noodles or rice.

Crock Pot BBQ Chicken

Chicken (boneless, skinless breasts or pieces)
1 cup BBQ sauce
1 cup coke

Place chicken in the pot and add one cup of your favorite bbq sauce and 1 cup of coke (plain old Coca-Cola). Cook on low for 8 to 10 hours. The carbonation in the coke tenderizes the meat.

You can try caffine free coke if ya wanna :)

I "smash" the meat with a potato masher to shred it after it is done. (You can use two forks too. This is just easier for me and you don't burn your fingers or get all messy.)

Serve with Rice or on buns.

Cranberry Chicken Dinner

4 chicken breasts (depending on the size. Some of those mongo Costco ones only need two).

1 package of Lipton Onion Soup Mix

1 Can Cranberries

1 small bottle of Russian Dressing.

Mix everything together so that each breast is equally coated with the cranberry sauce.

This can be frozen for a later meal, or baked at 375 for one hour in a baking dish. (cook with foil for 50 minutes and uncovered for ten)

Voila! Juicy and scrumptious!
