No Bake Cookies


2 cups Sugar .................................2 tsp. Vanilla
4 Heaping TBS. Cocoa ................1 cup Peanut Butter
1/2 cup Milk .................................3 cups Quick oats
1 cube Butter Or Margarine (I prefer butter)

Melt the butter first then add the cocoa, sugar and milk. Bring to a boil, Remove from heat. (If you let it boil longer than 30 seconds/a minute your cookies with end up crumbly). Stir in vanilla and peanut butter until melted. Stir in Quick oats. Drop on wax paper by teaspoon or tablespoon (depends what size you want them). Wait a few minutes until they set up, and enjoy!

Sugar Cookies (the soft kind!)


2 c. butter (margarine is ok)
3 c. sugar
4 eggs
2 T. Vanilla
7 cups flour
4 t. baking soda
1 t. salt
Cream butter and sugar, add eggs and vanilla. Add dry ingredients to creamed. I usually add a bit more flour if it is still too sticky. Roll thick, cut and bake at 350 for 8-12 minutes. Do not brown or they won't be soft.
Frost and decorate.
Sugar Cookie Frosting:

4 cups confectioners' sugar
1/2 cup shortening
5 tablespoons milk
1 teaspoon vanilla extract
food coloring (optional)
In a large bowl, cream together the confectioners' sugar and shortening until smooth. Gradually mix in the milk and vanilla with an electric mixer until smooth and stiff, about 5 minutes. Color with food coloring if desired

I always end up adding more flour. And I usually half the recipe because it makes ALOT and overflows out of my mixer. I always get asked for the recipe for these because they are literally the best sugar cookies ever!
