Sugar Cookies (the soft kind!)


2 c. butter (margarine is ok)
3 c. sugar
4 eggs
2 T. Vanilla
7 cups flour
4 t. baking soda
1 t. salt
Cream butter and sugar, add eggs and vanilla. Add dry ingredients to creamed. I usually add a bit more flour if it is still too sticky. Roll thick, cut and bake at 350 for 8-12 minutes. Do not brown or they won't be soft.
Frost and decorate.
Sugar Cookie Frosting:

4 cups confectioners' sugar
1/2 cup shortening
5 tablespoons milk
1 teaspoon vanilla extract
food coloring (optional)
In a large bowl, cream together the confectioners' sugar and shortening until smooth. Gradually mix in the milk and vanilla with an electric mixer until smooth and stiff, about 5 minutes. Color with food coloring if desired

I always end up adding more flour. And I usually half the recipe because it makes ALOT and overflows out of my mixer. I always get asked for the recipe for these because they are literally the best sugar cookies ever!
